Ukraine - Ukrainian Recipes Ukrainians enjoy a rich cuisine that is comprised of fresh ingredients, pickles, and smoked foods. Although their dishes are not spiced with a heavy hand as in some other cultures, they are seasoned just right in bring out the best of the ingredients without being bland. As with other countries in the same region, root vegetables such as beets, potatoes, and carrots can be found in a variety of dishes as well as cabbage and onions. Dill is a popular herb used to flavor salads and pickles. Borscht, a hearty soup made with beets, potatoes, cabbage, onions, carrots, garlic, and dill--finished with a touch of sour cream, is the most popular of Ukraine's national dishes. Varenyky, stuffed dumplings similar to pierogis, are another specialty. Another stuffed dough dish, Pyrizhky, Ukraine's version of Russia's pirozhki, are also local favorites.
