Monfongo Recipe
4 green plantains, peeled and cut into 1/2-inch chunks
4 cups beef stock or chicken stock
1/2 cup pork crackling or fried bacon
1 tablespoon chopped garlic
fresh ground black pepper
chopped fresh cilantro leaves
cooking oil
salt to taste
Saute the garlic with a teaspoon of oil and set aside.
In a deep fryer or deep pan heat the oil to 375ºF and fry the plantains till golden brown. Using a morter (a pilon or wooden morter works best), mash the plantains, garlic, pepper, and cracklings together. Serve preferably in a pilón garnished with the beef stock and cilantro.
