Puerto Rican Sofrito Recipe

2 green bell peppers, seeded and chopped
1 red bell peppers, seeded and chopped
10 ajies dulces peppers or 1 sweet pimiento, seeded and chopped
3 medium tomatoes, chopped
4 onions, cut into large chunks
3 medium heads garlic, peeled
one bunch cilantro leaves with stems
25 leaves culantro
1 tablespoon salt
1 tablespoon black pepper

In a food processor add all or the ingredients or work in batches and process until pieces are small but not pureed. Store in airtight container in the fridge. Fry mixture with a little olive oil for cooked sofrito sauce.
