Varenyky - Perogi Recipe

Dough

4 Cups flour
1 tsp. salt
1 Cup water
2 tbsp. corn or other vegetable oil
2 eggs

Filling

3 Cups of cooked mashed potatoes
3/4 Cups onion; finely chopped
2 tbsp. cooking oil
Salt & Pepper to taste

Preparing The Dough

Combine the flour and salt. Mix in the oil, eggs, and water. Knead the dough until smooth, about 5 minutes. Cover and let the dough sit for about 15 minutes.

Preparing Filling

Saute onions in a frying pan over medium heat in oil until soft and translucent. Mix into the mashed potato and season with salt and pepper.

Preparing The Varenyky

Roll the dough out thinly on a floured work surface. Use a 4 inch round cookie cutter to cut the dough into rounds. Place a spoonful of the filling in the centre of each circle. Moisten the edges of the dough with beaten eggs or water, fold in half to enclose the filling and seal the edges well.

Note: If you made more than you need, freeze before cooking.

To cook, drop into boiling salted water and cook until the dumplings are floating. Suggestion: serve with sautéed onions.
