Cucumber Vinegar Sauce
1 cup distilled white vinegar
6 tablespoons sugar
1-3 teaspoon sambal oelek or any simple chili paste
1 tablespoon finely chopped fresh cilantro
2 tablespoons cucumbers; peeled and diced small
Combine the first three ingredients in a non-reactive small sauce pan over medium heat. Heat gently until sugar is dissolved and chile paste has homogenized with other ingredients.
Remove from heat and pour into a bowl.
Allow to cool to room temperature.
Stir in the coriander and the cucumber and serve immediately or store, sealed, in the refrigerator for a few days.
