Ginger Dipping Sauce
2 garlic cloves, crushed
1 1/2 tablespoons sugar
3 tablespoons fresh lime juice
3 1/2 tablespoons fish sauce
1 red chili pepper, seeded and minced
1 tablespoon finely grated ginger
Toss the garlic, sugar, chile and ginger into a small bowl or mortar. Crush the mixture to a paste.
Add in the fish sauce and lime juice. Mix well.
