Yemen - Yemeni Recipes
Due to an Ottoman occupation long ago, Yemeni cuisine is more similar to Turkish cuisine than typical Middle Eastern cuisine. Beef can often be prohibitively expensive therefore, in regards to meats, chicken and lamb are more widely consumed. Those who live along the coastal areas consume more fish.
Saltah, the national dish, is made with either ground lamb or beef with potatoes, eggs, tomatoes, and a touch of skhug or zhug (Yemeni hot sauce).
