Hilbeh Recipe
2 tsp Fenugreek seeds
1/2 cup water
2 cloves garlic
1 bunch cilantro; chopped
1/2 ts. salt
2 tsp fresh lemon juice
1 hot chili pepper
Soak fenugreek seeds in cold water overnight. Drain and puress with garlic and coriander in a blender or processor, adding salt, lemon juice, chili and enough cold water to draw ingredients over blades. Turn into a jar, seal and store in refrigerator. Use as a bread dip or as specified in recipes.
